Salmon with Roasted Red Peppers and Tomato, Chick Pea, Red Onion, Feta Salad with Lime Vinaigrette

 Quarantine supper tonite...  Live from NYC...

It was bound to happen...  even predicted...  disappointing nonetheless...  the foray into late spring has stalled...  temps in the mid 50’s...  cloudy skies...  jackets and scarves once again...  a few hardy souls out and about...  walking...  running errands...  slowly beginning to live life again.


Coffee ☕️ turkey and salami rolled into a small tortilla...  no deck today...  too chilly...  100% of votes for a fish supper...  market day.  Dropped the hubs off for PT then...   race to finish at the market in under an hour just in time to pick him up...   made it today sliding into home plate as the catcher reached up for the ball...  YESSSS 


Quick supper tonite...  Norwegian salmon with olive oil and olde bay seasoning...  roasted mini peppers and cherry tomatoes...  chick pea... tomato and feta salad with red onion and lime vinaigrette...  Sauvignon Blanc accompanying the meal...  dessert... matzo crack and coffee for the hubs....  happy weekend folks 🙃


Covid is rising again...  many states easing restrictions...  amidst more transmissible variants...  vaccine pace increasing...  make that appointment and #GetYourJabOn  be part of the solution...   until then... you know what to do...  mask up...  limit interactions...  glide through the market and wash those germy hands 😷💕
