Meatloaf, Collards with Bacon and Onions & Skillet Cornbread

 Quarantine supper tonite...  Live from NYC...

Woke to rainy grey skies...  sunny afternoon...  temps topping out at 47°F...  wind kicking up...  tonite a freeze warning...  glad the babies are indoors... ensconced in their warm beds... tucked into the dining room...  growing taller each day.  


Coffee ☕️ and a granola bar...  cottage cheese and a banana for the hubs...  too chilly for the deck...  chatting about dinner...  a request for... “something other than pasta please” After two days of soft foods... time for a meal requiring a bit of chew. 


Successful visit with the orthopedic surgeon...  the hubs coming along well...  recovery estimated at 80% thus far...  both of us quite pleased...  another two months of PT on tap.  The hubs buzzing into his workshop post visit to relax and put the finishing touches on the planter.  


Playtime in the kitchen... Mr Sam supervising...  in the mood for a good long cook...  tonites supper...  beef, pork and veal loaf with homemade barbecue sauce atop...   collards with bacon, onions and garlic... skillet cornbread and a glass of Sauvignon Blanc for yours truly...  Cabernet for the hubs.  All in all a delightful meal...  the highlight... the collards.  Long cooking and delicious when softened with a poke of red pepper flake and bacon fat giving the greens a spicy rich flavor.  


New covid cases have doubled in the past week...  a majority the UK variant...  highly contagious and easily transmitted...  the fourth wave has begun.  When you are eligible make that appointment and #GetYourJabOn  be part of the solution...  until then...  double mask up...  limit interactions...  zoom through the market and wash those germy hands 😷💕
