Matzagne

 Quarantine supper tonite...   Live from NYC...

Sometimes the stars align and we get a stunning day...  today was that day.  High 60’s light breeze...  low humidity... barely needed a jacket...  in the office... sun streaming through the windows...  glorious.  


Visited with Mom late afternoon...  she is working on getting her bridge game back together.   Sat with her through her dinner...  chatting and enjoying one another’s company.  Stayed a bit late...  relishing the ability to visit sans mask...  giving her extra hugs and kisses to make up for lost time.


Supper tonite...  a brand new dish for us...  matzagne...  lasagna made with matzo instead of noodles...  homemade sauce simmered with sautéed onions... ground turkey...  red wine...  tomato purée...  oregano...  thyme...  parsley... Cajun spice mix...  ricotta mixed with eggs & parsley...   shredded mozzarella...  shredded Parmesan...  all layered under and atop matzo instead of noodles...  genius... and so easy...  special thanks to Dori Levy...  a big hit!!  Highly recommend...  tasted absolutely delicious... the hubs loved it 😋 A great way to use up all that leftover matzo 😛


Covid marches on...  although 32% of Americans have received at least one dose of vaccine...  current infections continue to spread rapidly through younger unvaccinated folks...  in NY all those over the age of 16 are now eligible for vaccination...  make that appointment and #GetYourJabOn  become part of the solution...  until then... double mask up...  limit interactions...  sail through the market and wash those germy hands 😷💕
