ChickenThighs, Cuban Style Black Beans, Brown Rice & Crisp Green Salad

 Quarantine supper tonite...   Live from NYC...

One more for the road...  another gorgeous day...  temps nearing 70°F...  teens riding bikes...  zooming along...  red sneakers flashing...  neighbors repairing their fence...   the whine of landscapers blowers in the distance...  oak tree blossoms getting fat...  ready to pop...  bulb tips coming up in the herb garden...  some our plantings...  some squirrels plantings...  birds chirping away...  calling out mates for the season.  Our cardinals busily nesting...  hoping for a new member this spring.


Iced Coffee ☕️ and an apple on the deck...  soaking in the warm sunshine...   the hubs taking a break from his current project to join for a hot cup...  Mr Sam snuggled under a chair basking in the joy of being outside.  Added two pots of nasturtium seeds to the greenhouse today...  should pop up in a couple of weeks.   Carrots survived the winter...  greens getting tall... leeks also made it through the winter...  growing rapidly in the warm longer days.


Supper tonight...  brown rice...  black beans Cuban style and spiced chicken thighs...  served alongside a crisp salad of sliced grape tomatoes and red onions on a bed of romaine...  balsamic vinaigrette atop.  A glass of Cabernet 🍷 for the hubs...  Sauvignon Blanc rounding out the meal.  Dessert... matzo crack...  so evil and delicious 😋 


Covid variant from the UK now the dominant strain in the US...  affecting mainly youth...  cases increasing across all states...  when you are able... make that appointment and #GetYourJabOn  be part of the solution...  until then...  you know what to do...  wear that mask...  limit those interactions...  hustle though the market and wash those germy hands 😷💕
