Mediterranean Keto - Day 28
Breakfast… wanna guess? Nah… 2 espresso shots with 4 tbsp half and half over ice 🧊 (GO power)
Lunch… had our little Princess 👸🏻💖 over with her beautiful mommy for a visit… better than any food… late snack instead of 1 ounce swiss cheese and lots of water 💦
Appetizer… 1 1/2 oz fresh mozzarella with sliced greenhouse tomato and fresh garden basil leaves drizzled with i tsp balsamic vinegar, six green olives stuffed with anchovy paste and a wedge of queso fresco
Supper… sliced boneless skinless chicken thighs with onion and garlic flake, thyme, basil, oregano, salt and pepper… sautéed until lightly browned then braised in its own liquid for 10 minutes… added 1 tsp Worcestershire sauce braised for 5 more minutes… added roasted veggies (brussel sprouts, mini sweet peppers, haricots vert) braised for 5 minutes more… off the heat added juice of one lemon… recovered and let sit for 5 minutes to combine… delicious 😋
Feeling empowered to control my food choices and feel satisfied after meals without hunger or deprivation… also finding the urge to be creative with food once again to satisfy the need for variety 😄
