Leftover Night - Skirt Steak, Chicken Tenders, Roasted Veggies with Shredded Cheddar & Maroulosalata

 Mediterranean Keto Day 4…


Breakfast… two ounces of espresso, one cup of whole milk over ice 🧋

 

Lunch… not hungry… lots of water 💦 


Supper… Leftover night…

Skirt steak from Wednesday’s dinner combined with chicken tenders from last nights supper…  served at room temp with a side of yogurt garlic dill dressing… also left from last night 🥩 🍗 

Mixed veggies… broccoli, cauliflower, haricots verts and carrots roasted in olive oil salt and pepper… shredded sharp cheddar melted on top 🧀 

Maroulosalata… Greek green salad of chopped romaine leaves, thinly sliced scallions, fresh dill, mint and parsley… dressed with red wine vinegar, olive oil, salt and oregano 🌿 and topped with feta cheese 😋


Had friends over for cocktails… Bombay Sapphire Gin, Canada Dry Diet Tonic and Lime… snacking board of cheese cubes, nuts, crackers, berries, grape tomatoes, and craisins… cocktail was delicious… enjoyed cheese cubes and a couple of raspberries 🍸


Late night snack… one boiled egg and I tbsp Mayonaise 🥚 


So far, feeling satiated… comfortably full… not feeling deprived… aches and pains slowly easing as the sugars are no longer irritating my joints… very pleased with that side effect… happy eating folks 💕😋
