Mediterranean keto - Days 27 & 28 Chicken SautΓ© and Chicken Salad Platter with Caprese Salad

Breakfast… wanna guess? Nah… 2 espresso shots with 4 tbsp half and half over ice 🧊 (GO power)


Lunch…  had our little Princess πŸ‘ΈπŸ»πŸ’– over with her beautiful mommy for a visit… better than any food… late snack instead of 1 ounce swiss cheese and lots of water πŸ’¦ 


Appetizer…  1  1/2 oz fresh mozzarella with sliced greenhouse tomato and fresh garden basil leaves drizzled with i tsp balsamic vinegar, six green olives stuffed with anchovy paste and a wedge of queso fresco 


Supper…  sliced boneless skinless chicken thighs with onion and garlic flake, thyme, basil, oregano, salt and pepper… sautΓ©ed until lightly browned then braised in its own liquid for 10 minutes… added 1 tsp Worcestershire sauce braised for 5 more minutes… added roasted veggies (brussel sprouts, mini sweet peppers, haricots vert) braised for 5 minutes more… off the heat added juice of one lemon… recovered and let sit for 5 minutes to combine… delicious  πŸ˜‹


Feeling empowered to control my food choices and feel satisfied after meals without hunger or deprivation… also finding the urge to be creative with food once again to satisfy the need for variety πŸ˜„

Breakfast - 2 shots espresso, 4 tbsp half & half over ice (a girls gotta have her go power) πŸ§‹


Lunch - lots of water… it was huuumid… 3 ounces swiss cheese 


Supper - boneless pork chop sautΓ©ed in olive oil with salt, pepper & Penzy’s Fox Point seasoning, broccoli, brussel sprouts, haricots vert & carrot chips roasted in olive oil, salt and pepper πŸ₯¦ 


Appetizer before supper - queso fresco (1 oz wedge), 2 cherry tomatoes (from the greenhouse quartered) extra sharp 12 month aged cheddar (sliced 3 oz) 5 green olives stuffed with anchovy paste πŸ˜‹


Late night snack - whipped cream sweetened with vanilla extract and stevia with 5 sliced strawberries πŸ“ 


So pleased with the eating plan… feeling in control of both appetite and food choices ❤️

Lunch…  one ounce each…extra sharp cheddar, havarti, and 2 mozzarella string cheese with 16 oz water πŸ’¦ 


Supper…  grilled chicken thighs skin on with roasted asparagus in olive oil with salt and pepper, caesar salad and caprese salad (tomato and basil leaves from the greenhouse) with 16 oz water πŸ’¦ 


Pre supper appetizer… piece of brie, three slices of Genoa salami and a glass of Gatao Vinho Verde πŸ₯‚


Late night snack… whipped heavy cream with vanilla extract and stevia leaf… and sliced strawberries πŸ“ 


Feeling very comfortable in my skin… pain substantially lessened… energy high… concentration improved… sleeping better… down almost 7 lbs… waiting for the fall to see the drop in cholesterol levels 🀞

Hubs enjoyed a vegetable omelette with his hot java ☕️ (he says it cools him off???)  


Lunch… a mozzarella stick and 12 almonds… not really hungry in the heat… and LOTS of water πŸ’¦ 

Hubs scoffed a crunchy peanut butter sandwich on ciabatta… an apple and two 24 oz bottles of water πŸ’¦ 


Supper… Shrimp salad board… with eggs… olives… fresh mozzarella… Brie… romaine leaves, creamy caesar dressing, strawberries and treats from the greenhouse… tomatoes, nasturtiums leaves, beet leaves, basil leaves, radish leaves & cucumbers… and a glass of Gatao Vinho Verde πŸ₯‚ so fresh and delicious on this HOT summer night πŸ˜‹

Lunch -  6 oz leftover striped bass, 3 tbsp mayonaise, 1 stalk celery, 2 tbsp   red onion making a delicious whitefish salad… wish LOTS of water πŸ’¦ 

     Hubs… a peanut butter man on a whole wheat round & LOTS of water πŸ’¦ 


Supper day 14 - 8 eggs, 1/8 c half and half, salt, pepper, garlic, onion, spinach, shredded sharp cheddar and mozzarella baked at 350 F for 45 minutes with sautΓ©ed boneless skinless chicken thighs cooked in bacon fat, and bacon…



topped off with a glass of Gatao Vinho Verde πŸ₯‚


Supper day 15 - 16 oz grilled kielbasa with grilled mini peppers and red onion… microwaved cauliflower with olive oil, salt, pepper, garlic, onion, oregan and basil… mixed with 1 c shredded mozzarella after cooling… and topped with 1/2 c shredded mozzarella… heated until cheese melts… keto version of mac and cheese πŸ˜‹ Addition for hubs… carrot chips with olive oil, salt and red pepper flake 🌢 He like the heat πŸ₯΅ Alongside a glass of Gatao Vinho Verde πŸ₯‚  Vanilla coffee for the hubs post supper ☕️


Feeling very pleased… aches and pains much less apparent… mood elevated… sleep quality improved… energetic… satiated


Every meal needs planning and prep… this eating plan really has no quick freezer to table meals for us since we are choosing to eat only fresh foods… 

Shopping for proper food on hand is important and necessary

Keto - Day 13 Striped Bass, Maroulosalata, Feta, Guacamole, Carrots and Zucchini

Breakfast… of course… 2 shots espresso, 8 oz whole milk over ice… I think I might not function at all without coffee πŸ§‹


Lunch… lots of water πŸ’¦ little appetite… busy all day 🀷🏼‍♀️

      Made a peanut butter sandwich on whole wheat round for the hubs πŸ₯œ 


Supper… crispy skin striped bass (caught by our son Mark) in a lemon butter sauce with roasted cauliflower and zucchini… guacamole on the side… maroulosalata with delicious feta from our friend Mariya… alongside a lovely glass of Gatao Vinho Verde πŸ₯‚

Add ins for the hubs… roasted carrots… sliced cucumber…and a lovely glass of Apothic Red 🍷 


Late night snack…  vanilla whipped cream 🍦(no cone)

Keto - Day 12 Cauliflower Pizza with Chicken, Roasted Peppers, Tomatoes and Mushrooms & Mozzarella

Breakfast… (sigh… I am a gal of consistency) 2 shots espresso, 8 oz whole milk over ice πŸ§‹


Lunch…  3 oz provalone , 2 ounces munster… 12 almonds… LOTS of water πŸ’¦ 


Supper… homemade cauliflower pizza crust topped with shredded mozzarella, roasted peppers, roasted crimin mushrooms, a very few roasted grape tomato slices, and grilled leftover chicken (from last night) 

Surprisingly delicious!! Who knew that cooked and squeezed cauliflower, egg, spices and shredded mozzarella and Parmesan made a dough!! 

Mind blown!! 

The hubs loved it too… although he also ate another chicken thigh and a plate full of curly fries 🀣

Alongside a half glass of Gatao Vinho Verde πŸ₯‚and a half glass of Apothic Red Blend 🍷 


Late night snack… frozen whipped vanilla cream πŸ˜‹


Ah yes… is the eating plan working?  A resounding YES! 

Down 3 1/2 lbs in the first week… feeling satiated… pain reduction substantial… inflammation much lowered… heat tolerance increased… energy levels increased πŸ™ƒ

Lunch…  3 oz swiss cheese, 1 hard boiled egg and lots of water πŸ’¦ 


Grilled crispy skin chicken thighs, homemade guacamole πŸ₯‘ roasted snow peas and mushrooms mostly for the hubs… Gatao Vinho Verde alongside πŸ₯‚and lots of water πŸ’¦ 


Late night snack… heavy whipping cream with stevia and vanilla previously whipped and frozen in portions… delicious and zero carbs 🍦(no cone)

Breakfast… 2 shots espresso, 8 oz whole milk over ice πŸ§‹(a girl and her java)


Lunch…  2 ounces swiss cheese, 10 roasted almonds, ice tea with stevia and lemon and lots of water πŸ’¦ 


Italian cheese and parsley sausage ring, grilled zucchini, grilled mini sweet peppers, grilled cauliflower, alongside a glass of Gatao Vinho Verde πŸ₯‚ and lots of water πŸ’¦ 


Late night snack… frozen whipped cream portion and swiss cheese cubes

Keto - Day 9 Smoked Steelhead πŸ˜‹

Breakfast… well, you already know… 2 shot espresso, 8 oz whole milk over ice πŸ§‹(a girl and her coffee)


Lunch… really had no appetite… super hot outside… but the DIL warned me against letting myself get hungry soooo… 2 slices of munster cheese on the way to Mom’s for a visit… brought a bottle of water too πŸ’¦


75 minute walk with Mariya… felt soooo good to get out after all the sitting (with Mom visiting) and the heat… a delightful stroll πŸƒπŸ»‍♀️


Supper… smoked steelhead leftovers… scrambled eggs with parsley and dill… fresh mozzarella… homemade pickled tomatoes (adore them) a few Swiss cheese cubes and a glass of Gatao Vinho Verde alongside πŸ₯‚ and LOTS of water πŸ’¦ 

Hubs opted for Cabernet 🍷


Dessert… 1 pint heavy whipping cream, 1 tsp vanilla, three packets of stevia… whipped in the Kitchen Aid to stiff peaks… put in 8 portions on a sheet pan to freeze… licked the spoon and whisk for todays dessert… sooo delicious and ZERO carbs… YESSSS 🍦(no cone) and more water πŸ’¦ 




So far feeling excellent… energetic… no tummy issues… satiated… aches and pains almost gone… walking easier… oh yeah… down three pounds  πŸ™ƒ

Breakfast - 8 ounces whole milk, 2 shots espresso over ice ( it’s getting dull and repetitive, right? Gotta have my morning Joe πŸ§‹)


Lunch - hard boiled egg and LOTS of water πŸ’¦ (92°F and humid 😩)


Supper - 85/15 ground lamb burgers with olive oil, egg, fresh mint, fresh parsley (both from the greenhouse) garlic, onion, oregano, salt and pepper sautΓ©ed in cast iron…  broccoli and asparagus roasted with olive oil salt and pepper, feta cheese with olive oil and oregano, and yogurt with mint and dill, alongside a glass of Gatao Vinho Verde πŸ₯‚

For the hubs added in one baked red potato with yogurt, roasted carrots, roasted zucchini and roasted asparagus coins with Cabernet 🍷

Lots of water as well πŸ’¦ 


Late night snack - 4 slices of munster cheese πŸ§€ 


Feeling well… energy high… tummy a-ok… aches and pains lessening… satiated… quite pleased πŸ˜€

Mediterranean Keto - Day 7

 Vaccinated supper tonite… Live from NYC…

Stunning day in the Big Breezy Apple 🍎 Low humidity… high temp 85°F… nice brisk wind… our tenant has been sitting on her nest for a few weeks now… hoping to catch a glimpse of the baby robins soon… she and Dad flew off for supper together for a bit tonite… but she was quickly back to tend to her duties 🐦 Saw the falcon again soaring on thermals… noticeably less pigeons around… couldn’t be more pleased πŸ¦… 


Breakfast… 2 oz espresso, 8 oz whole milk poured over ice (I am definitely a woman of habit with my coffee πŸ§‹) and water πŸ’¦  Hubs enjoying his cottage cheese and berries… Mr Sam stretched out in the shade of the lemon tree snoozing… kibble and water nearby 😻


55 minute hilly walk with Mariya prior to supper πŸƒπŸ»‍♀️on this gorgeous 75°F early evening


Late afternoon cocktail:  2 oz Bombay Sapphire Gin, 8 oz Cananda Dry Diet Tonic, juice of 1 lime…  poured over ice  (As Ina Galen says, “It’s five o’clock somewhere” Cheers 🍸


Supper…  8 oz freshly smoked (by the hubs) steelhead (tastes similar to salmon)  fresh mozzarella,  2 baby dill pickles, 4 homemade pickled greenhouse green tomatoes, greenhouse kirby cuke and lots of water πŸ’¦ 


The steelhead was such a treat… smokey, moist, incredibly flavorful… hubs did a superb smoke! πŸ˜‹


BA-5 variant spreading rapidly across the US…  hospitalizations lagging behind following Jul 4 gatherings… finger crossed 🀞 that they stay low… now is the time to #GetYourJabOn

Supper…  befteki (6 oz 85/15 grass fed ground beef, garlic flake, onion flake, 1 Tbsp olive oil, 1 egg, chopped fresh parsley, chopped fresh mint, sautΓ©ed in cast iron) with maroulosalata (romaine, dill, scallions, mint, parsley, oregano and feta in red wine vinegar and olive oil) three slices of uncured bacon and yogurt with garlic and dill and water πŸ’¦  (additions for the hubs: roasted zucchini, avocado and lemon) πŸ˜‹


Late night snack… 2 mozzarella sticks and water πŸ’¦ 


Feeling energetic… elevated mood… less achy… satiated☺️

Supper… 8 oz grilled uncured kielbasa (no sugar added) with French green beans, snow pea pods, carrot chips (for the hubs) with melted shredded cheddar… appetizer… few cubes of provalone cheese and five snap peas in their pods (raw) along with a glass of Gatao Vinho Verde (a baked potato with sour cream and skewered grilled zucchini…add ons to dinner for the hubs)


Late night snack… 2 mozzarella sticks and one hard boiled egg with 1 Tbsp Mayonaise πŸ₯š  and LOTS of water πŸ’¦

Breakfast… coffee for two ☕️πŸ§‹hubs enjoying his cottage cheese and blueberries… Mr Sam sitting on the deck… canopy open giving him cover as the drizzle begins… busy day of chores… hubs vacuuming, dusting, scrubbing 🧽 while yours truly deal with calls… bills… follow up..

Supper tonite… leftovers… skirt steak, chicken tenders, roasted veggies with shredded cheddar and maroulosalata (Greek green chopped lettuce salad with feta) a glass of Gatao Vinho Verde alongside πŸ₯‚ Delightful


BA-5 has arrived in NYC… current infection rate just below 20%… this variant seems to be a bit more virulent as hospitalizations have increased as well…

Mixed veggies… broccoli, cauliflower, haricots verts and carrots roasted in olive oil salt and pepper… shredded sharp cheddar melted on top πŸ§€ 

Maroulosalata… Greek green salad of chopped romaine leaves, thinly sliced scallions, fresh dill, mint and parsley… dressed with red wine vinegar, olive oil, salt and oregano 🌿 and topped with feta cheese πŸ˜‹ a glas of Gatao Vinho Verde alongside πŸ₯‚

Another gorgeous day her in the Big Apple 🍎 Moderate temps in the low 80’s with low humidity… just delightful.  Our resident robin has been incubating her nest now for a week… so pleased to have a “tenant” again this year ☺️


Mr Sam spending time on the deck snoozing on the warm boards while the hubs completes our second 4’ bench and yours truly putters around the greenhouse.  


Saw a falcon riding thermals… spotting a few pigeons for lunch… swooped down and nabbed one… the race car of birds… so elegant… so fast πŸ¦… 


A few dishes…  late suppers as we spend as much time as possible outdoors enjoying the mild weather of early summer…
