Herbed Gouda Omelette with Crispy Hash Browns and Crisp Green Salad

 Quarantine supper tonite...   Live from NYC...  

Rainy soggy most of the day...  late afternoon...  sun arrived and with it a gorgeous sunset.   Lots of birds out to revel in the sun...  mockingbirds squalking...  cardinals trilling to one another...  sparrows chirping...  gulls flying back to the sea overhead...  a hawk riding the thermals scouting for supper...   life returning to the land as the end of the persephone phase arrives.   Soon it will be time for seed planting...  the greenhouse quietly awaiting the arrival of spring.  


Coffee ☕️ oatmeal craisins and banana 🍌 gracing the breakfast table.   Dinner choices abound...  the hubs eagerly awaiting another serving of bolognese...  yours truly opting for lighter fare.  


Today a day off...  no appointments...  no calls...  a time to relax and recharge.  Spending time chatting with friends...  planning the weeks menu selections...  a new recipe for pork tenderloin in mustard sauce from ATK tantalizing the taste buds...  maybe this week?  The hubs descending into his workshop to work on his project of the day...  cleaning out the debris from the washing machine...  so lucky to have such a handy guy 🥰


Supper tonite...  a crisp green salad for the hubs to complement the richness of the bolognese...  Herbed Gouda omelette with hash browns...  flavored with garlic, onion and paprika...  made in a single layer in the oven and rolled onto the plate...  super crispy...  just the way we always want then at the diner... but never get them crispy enough.


J&J’s new vaccine approved today!  That’s great new for folks in rural areas who aren’t able to get to mass vaccination sites... a game changer...  when you are eligible make an appointment and #GetYourJabOn  until then...  you know what to do...  double mask up...  skate thought the market aisles...  limit all interactions...  and wash those germy hands 😷💕
