Pappardelle Bolognese with Parmesan

 Quarantine supper tonite...   Live from NYC...  

Almost vanilla skies...  small swaths of blue peeking through the cloud cover...  temps 45°F...   brisk wind...  folks with collars up...  scarves apparent...  masks 😷...  the NYC covid variant has arrived...  20% of all new cases in just the past two weeks.  


Coffee ☕️ oatmeal with craisins and cinnamon...  bolognese sauce on tonites menu...  picked up some fresh pappardelle at the market...  tummy smiling in anticipation.  


The hubs is free...  no more brace needed per the surgeon...  physical therapist pleased with progress...  time to rebuild lost muscle tissue...  weight lifting beginning today 🏃🏻 Mr Sam has adjusted to kitchen life...  no stairs to climb...  just scraps to snatch if it falls to the floor 😸


Supper tonite...  pappardelle with bolognese sauce...  lots of lean ground beef...  onion 🧅 garlic 🧄 chopped tomato 🍅 wine 🍷 oregano...  basil 🌿 bay leaves...  thyme...  ground Aleppo pepper and a dash of lemon juice 🍋 for that hit of acid at the end...  topped with Parmesan and parsley...   so rich and flavorful with a nice poke of heat.  


J&J’s single dose vaccine received emergency use authorization...  several million doses expected to be shipped out in the next weeks...  needing only standard refrigeration...  a game changer...  when you become eligible make that call and #GetYourJabOn as soon as you can...  until then...  you know what to do...  double mask up...  slide though the aisles at the market...  limit all interactions and wash those germy hands 💕😷
