Tex-Mex Ground Turkey with Salsa, Avocado ๐Ÿฅ‘ Sour Cream and Lime & Three Cheese Quesadillas

 Quarantine supper tonite...   Live from NYC...

Snow fell like baby powder through the day...  teeny flakes melting onto hair and skin soon as they touch...  piles of the white stuff mounded up in dunes aside of paths and sidewalks.  Small accumulations...   thank goodness...  only a few inches...   accompanied by bitter cold and wind.  Neighbors out shoveling...   chatting across fences...   waving across roads...  a glimpse of normalcy amidst a pandemic.    


Arctic blast gouging the US...  fourteen states currently experiencing rolling blackouts...  Texans dealing with catastrophic losses of power...  water...  food...  heat...  frigid temperatures expected to last through the weekend.  


Supper tonite a nod to Texas...  Tex-Mex style ground turkey over chopped romaine with salsa, avocado ๐Ÿฅ‘ sour cream and lime.  Three cheese quesadillas alongside spiked with Aleppo pepper ๐ŸŒถ for a little poke...  satisfying on this chill winter night.  A glass of wine ๐Ÿท rounding out the meal along with orange tea for the hubs.   


Covid still on the march... vaccinations ๐Ÿ’‰ outpacing new cases...  when you are eligible sign up and get your jab ๐Ÿ’‰ on...   until then...  you know what to do...  double mask up...  scamper through the market...  limit all interactions...  and wash those germy hands ๐Ÿ˜ท๐Ÿ’•
