Chicken Cutlets, Thin Sliced Potatoes, Napa Cabbage Slaw & Chocolate Chip Cranberry Brownie with Peony Blossoms

Quarantine supper tonite...   Live from NYC...

Sandwich day...  beginning with rain and clouds...  evolving into mild temps and bright sun...  finishing up with another dose of rain.  Peonies blooming...  their white faces...  yellow and pink centers cheering up the side yard...  a heavy rain might decimate the petals...  glad to have spotted them before tonites expected sprinkles.

Iced coffee ☕️ and a banana...  the hubs enjoying his hot java and cottage cheese...  our last two suppers...  one at El Gauchito... delicious... and another with dear friends... a delight...  reminding us to eat a smaller dinner tonite.

With tax season roaring to a close spent the day reviewing paperwork...  double checking arithmetic...  such a joy 😟... taking the hubs to PT a welcome break...  afternoon zooming by...  Mr Sam out on the deck basking in sunshine and warmth... suddenly... it’s time to prep our evening meal.

It was a pleasure to fuss in the kitchen...  chopping the Napa cabbage for  slaw...  massaging salt into the greens...  making the dressing...  carefully tossing the slaw together to rest and marry flavors...  slowly browning the potatoes...  dredging the chicken cutlets...  taking time to savor the process...  having a glass of wine while cooking...  anything to get far away from tax prep ✏️ 😂

Finally supper coming together...  sautéed chicken cutlets...  beautifully browned thin sliced potatoes...  a delightful slaw in creamy lime mustard dressing...  the hubs enjoying coffee and a chocolate chip cranberry brownie for dessert.

Inoculations have slowed as demand declines...  make that appointment and #GetYourJabOn  be part of the solution...  until then...   you know what to do...  mask up...  limit interactions...  dance through the market and wash those germy hands 😷💕

How was your day?   What’s on your plate?   Thoughts?
