Sausages, Roasted Potatoes, Tzaziki with Grapefruit, Mandarins, Blueberries and Sedition

Quarantine supper tonite...  Live from NYC...

CHAOS...  getting ready to take the roast out of the fridge to make a delicious warming beef stew today...  got a news alert on my phone...   Trump supporters attack US Capital...  whaaaat?

Turned on CBS and there it is...  American terrorism 😳 shocked...  stunned...  appalled...  angry...  damn it...   this has been simmering for years...  the ugliness within our country...  on view for all the world to see...  a brazen attempt at a coup incited by this administration...  watching the mob gleefully smash windows...   climb the walls of the capital onto balconies...  push past the Capital Police...  horrifying.

So much for my long cooking delicate stew...  by the time supper rolled around it was a simple meal instead.  Sweet and spicy Italian sausages slowly simmered in a pan...  Yukon gold potatoes roasted with garlic, onion, salt, pepper, smoked paprika and olive oil to crispy perfection...   tzaziki for that pop of acid from the yogurt...  accompanied by a grapefruit...  mandarin...   blueberry... fruit plate and Sauvignon Blanc...  a bit extra tonite for frayed nerves.

My thoughts...  2020 was an extremely difficult year for us all...  pandemic...  isolation...  illness...  loss...   we all knew 2021 would begin with more cases of the virus post holiday season...  especially with the new more contagious strain of covid...  and it was apparent that the administrations incoherent message post election was problematic...  we NEED the Republicans to find their voices and begin to tell Americans the TRUTH...  about the virus...   the election...  and the state of our democracy.

How was your day?   What’s on your plate?   Thoughts?
