Chicken Leg Quarters, Roasted Butternut Squash, Mushrooms Stuffed with Goat Cheese & Herbs and Green Salad

 Quarantine supper tonite...  Live from NYC...  

53°F...  sunny...  a taste of spring...  delightful to be able to go to the market without the wind biting outside the mask.  On the way...  finally got the car inspected...  overdue by 6 months...  ooops 😳...  just noticed it last couple of weeks...  then off to pick up supplies for Mom and a few bits and bobs for us.   


Got back a bit late...  hustled Mr Sam out of the kitchen to prep supper while putting it all away.  Stopping off at Moms on Monday to fill her fridge.  

Picked up a few items to try...  two packages of precut butternut squash mixed in with a package of broccoli slaw and a package of riced cauliflower...  all wrapped up in a $1.99 quick sell bag...   also a bag of grapefruits...  5 lbs for $1.99...  green plantains also 5 lbs for $1.99...   and lastly a huge bag of stuffing mushrooms...  $1.99.   


Decided to make stock later this week...  already have a big pork shoulder bone in the freezer...  needed chicken bones to add...  leg quarters on sale today did the trick.  Roasted them up for supper with garlic and onion powder, salt and pepper, turmeric and paprika in olive oil...  skin was so crispy...   roasted the butternut squash with cinnamon...  sweet and warming...   & finally made those mushrooms stuffed with goat cheese, dill, parsley, garlic an egg for a binder topped with panko breadcrumbs and a drizzle of olive oil...  saved the rendered mushroom liquid for a pot roast coming up this week.  Served alongside a fresh green salad with grapefruit supremes... and a grapefruit vinaigrette...  so light and delicious.  


The New Year has arrived...  a new administration will be sworn in on January 20th...  vaccines are becoming more widely available...  a glimmer of hope ahead as we endure one of the darkest winters in our lifetimes.  Please don’t get lackadaisical regarding Covid...  the new strain is 50% more infectious...  our hospitals and health care workers are already overwhelmed...  you know what to do...  mask up...  limit social interactions...  and wash those germy hands!
