Chicken and Black Bean Enchiladas with Cheeses & Side Salad

 Quarantine supper tonite...   Live from NYC...

Gray skies...  drizzle...  wind...  by nightfall some sleet and heavier rain...  a miserable day in the Big Soggy Apple.  Few folks out and about...  dog walkers huddled into their jackets against the chill...  hustling along...  no birds or squirrel activity...   dreary Sunday.  


New Year decluttering...  deep dive into the dining room sorting out what to keep...  what to donate.  Posted on our local Buy Nothing group...  hoping to seriously thin out the herd of belongings...   three generations of items needing culling...  five bedrooms of clutter to release.  Already donated 18 years of business attire to Goodwill...  feels wonderful to give it to those who can use it 💕  One room down...  many more to go...  loving the process. 


Tonite was Mexican night...  enchiladas with shredded chicken, black beans and grated cheeses...   cheddar and jack...   small side salad.   Quick and tasty...  chicken from last nights leg quarters warmed in sauce composed of onions, tomato paste, Worcestershire sauce, cumin, coriander, smoked paprika and chicken stock...   black beans simmered in caramelized onions, salt, black pepper, cumin, coriander, oregano and Cajun spice mix.  So warming on this chilly rainy night.  


Tomorrow Christmas vacation ends...  back to school for the kids...  back to work for adults...  it’s 2021...  little has changed...  yet...  but ahead there is hope...   a life saving vaccine...  a new administration...  light at the end of a very long and dark tunnel.  You know what to do...  mask up...  limit social interactions...  and wash those germy hands 😷💕
