Quinoa Pie and Baba Ghanoush

 Quarantine supper tonite...   Live from NYC...

Getting cold here in the Big Chilly Apple...   gloomy morning...  sun broke through in the afternoon to no avail...  no warmth to be had...  leaves covering the garden while tress stand naked...  stark reminder of the cold months to come...  no squirrels nibbling acorns today...  nestled in their beds avoiding the chill...  visited the green house...  41°F inside... 35°F outside...  keeping the plants happy amidst the coming of early winter.


At one time five seasons were recognized...  spring...  the renewal of life...  summer...  a time for growth...  autumn...  the season of harvest...  early winter...  a time of celebration and festivals...  and deep winter...  a time of slumber and rest...  we are currently in early winter season...  our celebration of life this year includes the selfless act of abstaining from gathering to prevail against the Corona virus and prevent needless deaths.  


The hubs is up and moving!  Back and forth to the bathroom every couple of hours...  mild ankle stretches prescribed by the surgeon...  post op visit tomorrow...  no pain meds save a couple of ibuprofen to sleep.  Looking forward to his return to life outside the bedroom.


Baba ghanoush served warm from the oven roasted eggplants...  crackers and a fork please...  a favorite appetizer prepping the palate for the main event.


Quinoa pie...  a grain filled version of a frittata with a pleasing texture and wide variety of fillings to be had.   Today’s version included sautéed onions and turnips...  wilted arugula...  shredded cheddar cheese...  seasonings and of course cooked quinoa and a few eggs to bind the pie together.  We agreed that it could use more aggressive seasoning...  but loved the recipe overall.
