Mediterranean keto - Day 29
Breakfast… 2 shots espresso, 4 tbsp half & half… over ice balls… that sounds funny, right? Well, on prime day these ice ball molds were so cute… got ‘em… they’re terrific... slow melting… about 2” across… just love ’em 🧋
Lunch… on the run... 1 mozzarella stick and lots of water 💦 so hot today (90+F) so appetite 🥵
Appetizer… 1 oz manchego, 2 oz extra sharp cheddar, 5 green olives stuffed with anchovy paste, 1 sliced baby dill pickle and a glass of Prosecco 🥂
Hubs had the same with a sliced avocado 🥑
Supper… caprese salad with fresh basil leaves, fresh mozzarella and greenhouse tomato with 1 tsp balsamic vinegar… fresh swiss chard and ricotta frittata with garlic, onion, thyme, oregano, basil, salt and pepper… chopped chard into strips… mixed into egg cheese mixture poured into a sprayed pie pan and baked at 350°f for about 55 minutes… and three strips of oven roasted BACON 🥓 With lots of water 💦
